Chorizo Egg Bake

I always like having a few meals prepped and ready to go in the fridge by Sunday evening.  It allows me to start each week on the right foot and with the best intentions of eating healthy meals that I actually make at home.

This one is a family favorite and very easy to make.  There’s really no way to mess this one up and it will make a great breakfast or even lunch. Another good thing about this recipe is the simplicity of ingredients.  Five ingredients and you are on your way.

  • Chorizo Sausage casing removed
  • 1/2 onion chopped
  • 1/2 green pepper chopped
  • 1/2 red pepper chopped
  • 6 eggs




Pan fry your sausage, onion, and peppers.  You can add some cumin and chili powder if you like.  I don’t find that I need to because of the brand of Chorizo I buy.  Check them out if you are looking for a good local farmer.  These guys are the best in my eyes.


After the sausage is cooked and onions and peppers are tender transfer them to a 7×11 dish.  Make six little holes so your eggs have a home.  Crack the eggs over each hole.

Now throw that in the oven at 400 for about 15 to 20 minutes.  ( I like my eggs over medium so 15 minutes perfect for me)

Here is the final product.  I perfect breakfast for anyone on the run, or not.  I hope you enjoy it!!  I love cooking and sharing my experiences.  Food will always be my love language.
